Chilled Pumpkin Soup Recipe

The recipe for Chilled Pumpkin Soup that Dick Jordan served at last week's "Final Exam" luncheon came from Epicurious. com.



Like most recipes, you need to adjust the amount of the ingredients to get both the consistency and taste that you prefer.

Dick used more pumpkin (one 15 oz and one 29 oz can), and less milk (only about 4 cups) to produce 3+ quarts of soup.

The soup requires no cooking. Just stir all of the ingredients together and refrigerate. (Dick made the soup the day before the hike.)
